
After our CSA box and a weekend in Alabama, I had a lot of veggies to put up. This is my first canning of the season, and my first time without using a pressure canner. Although it was very time consuming, I am proud of my results and I feel like a good steward of what we have been provided. The first time doing anything is always the hardest, so I'm hoping I am over the "hump" and canning will become more of a norm around here.
While we were at the Beams we tried some salsa Gary and Olethia had made. It was so good (I think I ate a whole jar) that it motivated me to try it. This is the recipe. It makes about 8 pints.
